Apple / Carrot Oatmeal Cookies

INGREDIENTS

  • 1.5 cups organic sprouted rolled oats
  • 3 honey crisp apples, peeled and grated
  • 1 large carrot, peeled and grated
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • Juice of 1/2 lemon
  • Melted coconut oil or butter to brush the parchment paper
  • Optional – 1/2 tsp ground cinnamon

DIRECTIONS

  1. Preheat oven to 375℉ and line a large baking sheet with parchment paper brushed with melted coconut oil or butter.
  2. In a large bowl, combine the apples, carrots, and lemon juice, and set aside.
  3. Using a blender or Nutribullet, grind the oats until you make a fine flour. Pour over wet ingredients and mix all ingredients with your hands until well incorporated. Add the remaining ingredients. If the apples are too juicy and the mixture is too wet, add more oats (either whole or ground).
  4. Pour mixture over baking sheet and spread evenly with your hands onto a thin layer (you may need to wet them so the mixture does not stick to your hands).
  5. Bake for 45-60 min, or until crispy on the edges – if the apples are too juicy it may take longer. Flip the cookie layer after 45 min of baking to make sure it is evenly cooked.
  6. Store in an airtight container at room temperature or freeze.
