Banana Bread

Serves 10-12 slices


  • 1.5 cup buckwheat flour
  • 1/2 cup organic cane sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 4 tbsp (half a stick) melted butter/ghee
  • 1 large organic eggs, at room temperature
  • 3 large very ripe bananas (4 if small)
  • Optional – 1/4 cup pecan or walnut pieces

  1. Preheat oven to 350℉, grease a loaf pan with oil, and line with parchment paper. Oil the paper next.
  2. Combine the dry ingredients in a large bowl, taking care to break up any large clumps of flour.
  3. Whisk together the wet ingredients in a small bowl, then gently add the wet ingredients to the dry. Mix until well combined. Add the nuts, if using, and mix again.
  4. Pour the batter into the pan and bake for 25-30 min, or until the top is a deep golden brown.
  5. Transfer to a cooling rack and let it cool down to room temperature before slicing.
