- 2 tbsp chia seeds
- 2 cups coarsely chopped fresh strawberries (could use frozen but you need to thaw first)
- 1-2 tbsp lemon juice
- A few drop of concentrated monk fruit extract (NOW foods)

Directions
- Place strawberry pieces in a saucepan and cook over medium heat until the fruit starts to break apart and resembles a “thickish” syrup.
- Add lemon juice and monk fruit extract, a little at a time, tasting after each addition. Keep on adding until you are happy with the taste.*
- Turn off the heat and add chia seeds. Stir well.
- Let jam sit for 5-10 min, until the mixture thickens and get a jam-like consistency. Add more chia seeds if you like your jam real thick.
- Transfer to a jar with a lid, let cool, and store in the refrigerator until ready to use.
*NOTE – monk fruit extract is extremely sweet (up to 200 times sweeter than sugar!). Make sure to taste after you add each drop and add only 1-2 drops at a time.
