INGREDIENTS
- 6 zucchini (courgette)i, medium size, spiralized
- 3 cups yellow and red cherry tomatoes
- 1-2 tbsp olive oil
- 1 tbsp avocado oil
- Kosher salt to taste
- 3 large basil leaves, coarsely chopped
- Avocado Sauce
- 2 avocados
- 2-3 tbsp milk kefir
- Kosher salt to taste

DIRECTIONS
- Make the avocado sauce by mashing the avocados with a fork, or by using a small food processor. Add milk kefir, one tbsp at a time, until you get the consistency of a thick sauce. Season with salt, transfer to a bowl, and set aside.
- Heat the oven to 375-400 °F and line a rimmed baking sheet with parchment paper
- Cut the cherry tomatoes in half and place them in a large bowl. Add one tablespoon of olive oil and toss the tomatoes until completely covered in oil (if you need to add more oil, add more). Add some salt and toss again.
- Line up the tomatoes in a baking sheet. Roast for~20 min, or until the tomatoes are “blistered” and begin to burst, turning the baking sheet around halfway through the cooking time. Set aside.
- Place zoodles in a large skillet with 1 tbsp avocado oil and gently sauté for 1-2 min.
- Transfer the zoodles to a serving bowl and toss them with the avocado sauce until well combined.
- Add the roasted tomatoes, mix to combine, and top with shredded basil leaves.
