Salsa Verde


  •  1 avocado
  • 1 small bunch fresh cilantro
  • 1-2 pinches salt
  • 1 generous squeeze lime juice
  • 4-6 tomatillos (4 if big, 6 if small/medium)
  • 1-2 green onions (white part only)
  • tip of a serrano chile, seeded and devained (add more or less depending on how hot you like it)
  • 1 splash of water

  1. Place all ingredients in a blender, except for lime juice, water and salt.
  2. Add a bit of water and blend – you may need to add a tiny bit more water.
  3. Add lime juice and salt, blend and taste.
  4. Adjust with more salt, lime juice or serrano chile to taste.

What are the benefits of this dish?

Avocados are thought to have originated in Mexico, and are loaded with healthy fats, fiber and various important nutrients. [1]

Monounsaturated fats (those present in avocados and other foods such as olives, some meats, and certain nuts, like macadamias) are known for their beneficial effects on cardiovascular disease. [2] In addition, fats from plant-based sources like avocados have shown positive alterations in gut microbiota biodiversity. [3]

Monounsaturated fats have been the only fats that even typically fat-phobics agree are completely healthy!

When thinking of ways to incorporate avocados in your diet, go beyond guacamole! Avocados can be used in smoothies, deserts (chocolate mousse!), salad dressings, soups, and even as a container to bake your eggs in. The possibilities are endless!
